The loin strip is obtained when the meat is separated from the ribs by cutting at the level of the sixth lumbar vertebra. With an elongated shape, it is one of the most appreciated pieces of pork. Being close to the needle makes this meat very tasty and soft.

Recipes and uses in the kitchen:

As it is a meat that is already boiled, the best way to consume it is grilled, in fillets or in the oven, introducing the whole piece. If you are going to do it in the oven, varnish the piece with olive oil and add a can of beer to the tray, but not on top of the loin strip. Bake for an hour or so. Remove from the oven and let it rest for about 15 minutes before cutting and serving. You can accompany with vegetables.
